- Choose the eggs. Nebbi- Clad in orange shirt, brown coat, khaki trouser and a torn leather shoe with hips of trays of boiled eggs lifted on his shoulder, 30 year-old man sets out to earning a decent living in this current world which is not an easy thing.
His eyes, ears are tuned to get a whistle from customers on the road side. It requires creativity, innovation and commitment.
Even the young feel the pinch of poverty especially when the families are not economically unstable. And in this way, a 35 year-old man, Mr Brian Ongeiwun, dropped out of Senior Three to start his business.
It is selling of boiled eggs in trays. This may seem a dirty and tiresome work, Ongeiwun says he now lives a decent life. “I started the business with selling half a tray of boiled eggs and at that time a full tray was sold at Shs 2400. “I had been bullied and attacked by rugby boys in the area, but this did not stop him from selling eggs at Shs 150 for an egg.”
This is the only way he knows could help his family. He has sold the boiled eggs since 1998 though education was also on the back of his mind. Sometime back, he had a break and resumed fully in 2000 till now.
He has huge customers from traders, revelers and those at leisure at bars and restaurants.
While in primary, he used to sell eggs even during school hours, especially when he needs to buy scholastic materials. And he sells till 11 Pm.
“And I am able to buy 15 goats which has multiplied, bought two semi-permanent house which I rent out I want to construct a permanent house and live a descent life.”
Right now, one buys an egg at Shs 400. He is actually nick-named Oeggse because of his love for selling eggs for a long time.
He was inspired by two of his friends who were selling eggs and earning money. But he does not forget the science he was taught about eggs. “Eggs contain most of the recognized vitamins with the exception of vitamin C. The egg is a good source of all the B vitamins, plus the fat-soluble vitamin A. It also provides useful amounts of vitamin D, as well as some vitamin E,” he said.
Ideally he also contributes to the health of many who may see it a local business from the outlook. He then asked his mother to buy eggs and hard boil them so he could join to earn from the business.
But boiled eggs offer a range of health benefits like they are great for the eyes as they may prevent macular degeneration due to the carotenoid content, specifically lutein.
Secondly, that people who eat eggs every day lower their risk of developing cataracts, one egg contains 6 grams of high-quality protein and all nine essential amino acids.
He now has three children which he is now paying in Nursery school. Because he sells eggs near a fast-food chain, some customers would offer him to join them at their table for a drink and food.
He reports to work at 7:30 am as he targets traders leaving the town early for market in other areas. “I can now sell 10 trays in a day and the lowest amount I earn in a month could be Shs 800,000 which I also save some,” he said.

And people should also be aware that they are a good source of choline. One egg yolk has about 300 micrograms of choline.
Mr Joseph Onen, a regular customer, said: “Sometimes I buy for the family and it is cheap food to get from him especially when you are hungry, you just call and feed yourself.”
To relieve him from too much work, the wife helps him to boil the eggs and he later picks them to traverse corners of the town. Sometimes people fail to pay debts and insult him with his nature of the work.
Health Experts warn that consuming eggs every day can put you at risk for heart disease by increasing your blood-cholesterol levels. The high caloric content may lead to weight gain if you eat too many.
He has also employed four other young people who sell for him since the business has expanded and cannot manage lonely. He has created market for farmers who deal in Layers.
WAYS TO BOIL EGGS
Add just enough salt to make the water taste salty. This can make the eggs easier to peel because, as mentioned earlier, the proteins coagulate and firm up, making the white easier to separate from the shell.
Put on the lid. Bring the water to the point of boiling, over high heat. Leave the eggs in the hot water for ten to fifteen minutes. It is important you do not start the timer until the water starts boiling, and that you turn off the heat.
Stop the cooking process. Chill the eggs by placing them under cold running water or in a bowl of ice water. Let them sit for a few minutes until the eggs are completely cool.
